So every year we set out a flaky, cheesy appetizer, ideally one with tons of flavor, that’s make-ahead and seriously simple. The two kinds of cheese that we used in this recipe areRoth GranQuesoandRoth Chipotle Havartiand here’s what you should know about them.First up is the Roth GranQueso, which is a Spanish-inspired cheese that has won all sorts of awards. The rind is red because it’s rubbed with a spice mix that’s pretty secret, though we do know cinnamon and paprika are involved. The cheese has this complex nutty, almost brown butter flavor that’s so crave-worthy we’ve been snacking on it every time we see it but it’s also a perfect pairing for this recipe.And then, for a bit of heat, we added the Chipotle Havarti. Ingredients

For The Puff Pastry:

  • 2 sheets all-butter puff pastry dough thawed

For The Caramelized Onions:

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion quartered and thinly sliced
  • Kosher salt and Freshly ground black pepper
  • 1 tablespoon fresh thyme leaves
  • 1 medium butternut squash peeled, sliced into thinly sliced half moons (you need about 50)
  • 3 ounces Roth GranQueso thinly sliced or shaved
  • 2 ounces Roth Chipotle Havarti grated
  • 1 large egg lightly beaten

Instructions

  • Prepare The Puff Pastry:Line two rimmed baking sheets with parchment paper and set them aside. Cut the thawed puff pastry into 4-inch-by-4-inch squares and keep refrigerated until ready to use.

  • Make The Caramelized Onions:Heat butter in a medium frying pan over medium heat, add the onions, and season with salt and freshly ground black pepper. Stir to coat, then keep cooking, occasionally stirring, until the onions are golden brown.

    Stir in the thyme and remove the onions from the heat to let them cool down slightly.

    TIP: The caramelized onions can be made up to four days in advance. Store refrigerated in an airtight container until ready to use.

  • Assemble The Savory Danish:Remove the puff pastry from the refrigerator. Assemble the pastries, leaving a bit of a border, by layering each square with a few slices of the GranQueso, then top with a small spoonful of onions and top with 3 to 4 pieces of squash, then top with 1 teaspoon grated Chipotle Havarti.

    Repeat for all pastries. Place in therefrigeratorto chill for about 15 to 20 minutes while you heat the oven.

    TIP: The assembled danish can be made andrefrigerated up to 1 day aheadat this point.

  • Bake The Roasted Butternut Squash Danish:Meanwhile, heat the oven to 375°F and arrange a rack in the middle.Remove pastries from the refrigerator and brush pastries with the egg wash.

    Arrange the pastries on the baking sheets, then bake, rotating the sheets once, until the pastries are golden brown and all the cheese is melted for about 20 to 25 minutes. Serve warm or at room temperature.

    TIP: The danish can be made up to one day ahead —store in an airtight container at room temperature until ready to serve. If you want to crisp them up and serve them warm, heat them in a low toaster oven or an oven set to 250°F until warmed through.
