I am super excited to share this lip smackin’ good Brussels Sprouts recipe with you! The lovely little green spheres are delicious on their own but this recipe takes them over the top. It contains so many of my favorite flavor profiles like mild shallots, comforting real maple syrup, savory and salty low sodium tamari sauce and tangy Dijon mustard. Each bite is pure joy! In her cookbook Chef AJ says, “Even people who say they don’t normally like Brussels sprouts will enjoy this dish”. It’s absolutely a company worthy dish. The recipe called for finely diced red pepper but all I had was a yellow one so I went with it.

The chopped walnuts are optional but I really enjoyed the the crunch as well as the flavor they added. You don’t need much just a little sprinkle will do.

We enjoyed the Maple Glazed Brussels Sprouts as a side dish along with Chef AJ’s Hearty Lentil Loaf – the recipe is also in her cookbook Unprocessed. Our tummies were so happy!

Maple Glazed Brussels Sprouts

  • 1 1/2 pounds fresh Brussels Sprouts
  • 1/4 cup finely minced shallot
  • 1/4 cup real maple syrup
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon low sodium tamari sauce
  • 1 Tablespoon arrowroot powder
  • finely diced red bell pepper – optional
  • chopped walnuts or pecans, (raw,candied or spiced) – optional

Cut stems from washed Brussels sprouts, then cut in half. Cook for 2 minutes in boiling water or I steamed mine for 2 minutes. Drain and rinse in cold water to stop the cooking process. (This step can be done well in advance if you want to prep them early for a dinner party)

Wisk together maple syrup, tamari, Dijon mustard and arrowroot, set aside.

In a heavy nonstick pan, saute shallots in a little vegetable broth or water for 2-3 minutes.

Add Brussels sprouts to the pan with shallots and saute for 4 minutes longer. Pour maple syrup mixture over Brussels sprouts and cook 2 more minutes or until sauce is thickened. Garnish with red bell pepper and nuts if desired.

Cookbook Giveway!

I have made several of Chef AJ’s recipes and all have been big hits around my house. I first learned of Chef AJ on the Dr Fuhrman message boards. Her cookbook and recipes are quite popular there as well as on the Forks Over Knives and Engine 2 web sites. She is a professional chef who also is a keynote speaker and culinary instructor all across the United States. Chef AJ and her husband both follow a plant based diet and they reside in Southern CA.

I find her recipes to be stream lined and easy to follow. This cookbook does contain quite a few sweet treats which I haven’t tried yet – but they do sound tempting and I have read rave reviews of them on the Furhman message boards.

I’ve been very impressed with her soup recipes like the Nutrient Rich Black Bean Soup on page 134. It’s not only hearty, filling and flavorful – it’s also packed full of healthy vegetables. Love that!

After making another one of her soup recipes, I contacted her to ask if she would mind me posting about it and she not only gave me permission to do that but she also offered to give a cookbook away to one of my readers! I am so delighted to be hosting this giveaway.
