Ube Turon

I make ube halaya all the time, not only because we’re big fans of ube at home but also because I love baking with ube jam (can you tell? LOL).

Ube turon is the latest in a long list of ube desserts I make. And as always, it’s so darn good.

Let’s get to it.

  • Easy to make. Unlike other ube turon recipes, mine doesn’t contain malagkit or glutinous rice. I decided to make it simpler and easier to make. Just jam and cheese, that’s it!
  • Easy to customize. But it’s incredibly easy to customize. You can add other ingredients that go well with ube, or that you’d like in your turon, like macapuno, langka and even saba or plantain!
  • Portable. These are great to bring to picnics and potlucks, perfect for lunch boxes, and for eating on the go.
  • Delicious. Ube and cheese in a crispy spring roll wrapper.You won’t be able to eat just one.

How to make

Making ube halaya turon is similar to how you make turon (turon in English is banana spring rolls) and apple spring rolls — roll ingredients in a spring roll wrapper and fry.

Ingredients and cooking tools

You will need just 5 ingredients in this recipe:

  • Ube halaya or ube jam — I always use homemade ube jam in my ube recipes. You can also use your favorite ready-made jam, the important thing is you use ube that you enjoy eating on its own.
  • Cheese — I like using strong cheddar cheese because it goes so well with ube. However, you can use whatever cheese you have on hand.
  • Spring roll wrapper (or lumpia wrapper) — you can find spring roll wrapper in the freezer section of your supermarket. It’s also available in Asian supermarkets.
  • Cornstarch — mixed with a little water, this is what we use to seal the turon.
  • Oil — for frying. We use canola oil but you can use whatever you use at home.

As far as cooking tools go, nothing special needed, just a pan for frying.

Position a spring roll wrapper on your workspace (I like using a large cutting board) so that it looks like a diamond when you look down on it.

Place ube jam and slices of cheddar cheese.

Roll starting from the bottom.

Then fold the sides.

Then seal the top by dabbing some cornstarch mixed with water.

Fry on medium-high heat until golden brown. You really only need about a minute on each side.

Remove from pan and allow the excess oil to drain before serving.

Expert cooking tips

Easy, right? Here are more tips for perfect ube cheese turon every time.

  • Don’t overfill. I only place about 2 heaping tablespoons of ube jam and 2 small slices of cheese as filling. If you overfill the turon, the filling might ooze out during cooking.
  • Wrap snugly but not too tightly. Wrapping too tightly will also cause the filling to ooze out.
  • Don’t overcook. Remember that the filling is already cooked. Once the wrapper turns a nice golden brown, take it out.
  • Don’t overcrowd. For best results, don’t overcrowd your pan when frying.
  • Allow the oil to drip before serving. I like to place the freshly cooked rolls on a wire rack. Placing them on a plate on top of one another tends to make them soft and soggy.

What does ube turon with cheese taste like?

If you’ve ever had ube pies, this tastes very close to that, except we don’t use pastry and it’s fried.

It’s sweet from the ube jam, salty from the cheese, and crispy from frying. It’s delicious!

Can I use fresh ube, frozen ube or powdered ube?

This recipe uses ube jam.

If you have fresh ube or purple yam, frozen ube or powdered ube, you can’t use them as is. You’ll need to make ube jam first.

Can I use my air fryer?

Yes, you can.

The temperature and cooking time largely depends on the kind of air fryer you have but you should be good following directions on how to cook generic spring rolls.

Can I freeze ube turon?

Like banana turon, ube turon freezes very well.

You can make a batch, roll them, and place them in a freezer-safe container. Ensure that your container is air-tight so that they don’t get freezer-burn.

You can fry them straight from the freezer, no need to thaw

How long does ube turon last?

Ube turon is best eaten the day it’s made because they lose their crispiness the longer they sit.

To store leftovers, place in a covered container in the fridge.

Heat in the microwave before serving and, optionally, pop in the oven toaster to add back a little of that crunch.

  • 23 oz ube jam or ube halaya
  • 7 oz cheddar cheese sliced
  • ¼ tsp cornstarch mixed with a little water

    Gad extra lumpia wrappers from turon so decided to make some ube turon (used Buenas brand jam) and everyone wanted seconds. We had none unfortunately lol because we made such a small batch but definitely making again! Trying with langka next time.
